I made these little beauties today in preparation for my week ahead. You can see the lunches I have prepared by clicking here.
The original recipe is from BodyBuilding.com's lovely Jamie Eason.
The first time I cooked these, they were lovely, however I found them a little bland. This time around Matt had the idea to make them info muffins and perhaps add a handful of chocolate drops into the recipe to give it that extra oompf. I know this raised the calories for the recipe, but to me it was worth it as they are very tasty and I can't wait to have them as snacks tomorrow.
The recipe is as follows:
- 1 cup oat flour (I didn't have oat flour, so I blended some Quakers Oats)
- 4 egg whites
- 2 scoops vanilla whey protein powder
- 1/2 cup splenda (or low calorie sweetener)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 226g of berry baby food
- 3 tbspn baking cocoa
- Water (I used one of the empty baby food jars to fill)
Mix the dry together, mix the wet together, mix the wet with the dry. At this point you can pour the mixture into a baking tray, to make bars - or you can do as I did and spoon the mixture into cup cake patties to make your own muffin/cup cake style protein bars.
Place into a preheated oven (around 180-200degrees) and cook for 18mins or so.
Enjoy! They were wonderful fresh out of the oven and that little bit of chocolate inside made them just perfect :)
