Chicken Chow Mein

As you know part of my regular Sunday routine is to batch cook my lunches for the week.  Matt has made some kind of Jerk Chicken for his (even though he doesn't eat it every day for lunch) and I have made Chicken chow mein.

This takes me around 20mins to cook up and it is totally worth it.  I can not express to you how much time, effort and money it saves when you are actually prepared and you have planned ahead.
Failure to plan, is planning to fail.  Simple!

It tastes fantastic and I can't wait to eat this every day :)  Snack's for the week are going to be apples & cinnamon, yoghurt & agave nectar, protein muffins (stay tuned!) and whatever else I can find scratching around.

You are seeing right. That is a whopping 31 grams of protein per serving.

Impressed? You should be!
Inspired? I hope so!

What is on your menu for the week?

  1. Hi Jenn! I just found your blog via your guest post on where are your knees. Excuse me for my stupidness, but do you freeze the other portions and take them out the morning you need them? xxx

  2. Hi Sophie, not stupid at all :) I should have noted that! I usually keep 2 in the Fridge and the other 3 in the freezer. Then I take them out as needed (the night before) so they have a chance to defrost overnight :)
