Pumpkin Spice Pancakes

As you might recall, the other day I was searching for some recipes online that used canned pumpkin.  I managed to find a recipe for Pumpkin Spice Pancakes on one of my go to websites, BodyBuilding.com.

The recipe I found was for Pumpkin Spice Pancakes.
Ingredients:
Directions:

  1. Preheat griddle to medium heat.

  2. Mix oat flour, Splenda, baking powder, salt, cinnamon, allspice & nutmeg in a bowl.

  3. Wisk egg whites and pumpkin. Mix in nut milk

  4. Add wet ingredients to dry ingredients and mix together.

  5. Spray griddle with non-stick butter spray.

  6. Scoop batter with a 1/4 cup measuring cup onto griddle. Cook 3-5 minutes on a side.  Makes 10 pancakes.

Fat: 1.3 grams
Carbs: 9.5 grams
Protein: 3.5 grams
Sugar: 0 grams


I don't claim to be a food photographer and my presentation isn't nearly as beautiful as some other wonderful blogs out there.... so the photos above are pretty average!

I mean.  I made the pancakes.
I tried the pancakes (while standing at the stove cooking another one).
I loved the pancakes.   Then I couldn't stop eating.
The last thing I felt like doing was stacking the little guys and presenting them to the camera for a photo shoot.

I really admire the people who manage to take beautiful photos of food that make you want to go right now and make the recipe.  One day I would love to be like that! However, all I could think of was stuffing them into my face.  There.  I said it.

Bro tip #1 - NEVER get in the way of Jenn and her food.  It will not end well ;)
